Diner-Style Au Cheval Heading to 12 South

Au Cheval, a concept from Chicago-based Hogsalt Hospitality, is heading to Nashville. It will open at 2212 12th Ave. S. #124 in the Ashford 12 South mixed-use development, according to a permit filing. It will open in late fall 2026, according to a release sent to What Now Nashville.

The permit describes the space as a single-story restaurant with 4,435 square feet of indoor space and 575 square feet of outdoor patio space.

Hogsalt Hospitality, helmed by Brendan Sodikoff, operates locations of Au Cheval in Chicago and New York. The elevated diner-style restaurant serves salads, burgers, dishes that pair with eggs and other offerings such as honey-fried chicken and matzah ball soup. The restaurant also serves beer, wine and cocktails.

Hogsalt operates a portfolio of 19 restaurant locations across multiple concepts, including Aster Hall Chicago, Bavette’s in Chicago and Las Vegas, Ciccio Mio in Chicago, Gilt Bar in Chicago, Lobster Bar in Chicago, Monkey Bar in New York City, and La Renommee in Paris.

Sam Fox, founder of Fox Restaurant Concepts and current founder and operator of Author & Edit Hospitality, is partnering with Hogsalt to bring the concept to Nashville, according to the release. Author & Edit Hospitality is also behind The Twelve Thirty Club on Upper Broadway.
