Paititi Peruvian Bistro showcases Peruvian culture through traditional and contemporary dishes. During its recent inspection, the following violations were reported:
- The report mentions that the handwashing station in the kitchen was observed blocked by a pot of boiled eggs inside the sink basin.
- Observed use of vacuum sealed packaging for reduced oxygen packaging (ROP) of several foods, including cooked pork, marinades, sauces, cooked chicken, and raw meats stored for more than 48 hours and lacking a date marking.
- The report mentions that the absence of a certified food safety employee; certification is required within 60 days.
- Food handler cards were not available for review at the time of inspection, as mentioned by the inspectors in the report.
- The cook was not wearing gloves while handling ready-to-eat foods, including onions and garlic.
- The report noted that cutting boards at prep coolers were dirty and required immediate cleaning and sanitizing.
- The report noted missing consumer advisory labels for raw seafood items and the absence of a required warning statement.
- 10-15 fruit flies were found in the bar, according to the report.

Follow-Up Inspection

The restaurant received a yellow placard for imminent health hazards and must correct all violations before a reinspection within 24 to 72 hours. A green placard will indicate compliance with food safety standards.
